Sweet Sticky Baked Drumsticks

These sweet sticky baked drumsticks are basically like healthy Asian barbecue. I love my BBQ sauce on the sweeter and tangier side, and the combination the balsamic, brown sugar, and honey do just the trick. Aside from basting the chicken twice, this is a pretty low maintenance recipe, and I like to serve this with just white rice and broccoli or string beans. Finger lickin’ good.

Ingredients (4 servings)

-8 chicken drumsticks
-1 tsp sesame seeds
-Cilantro, for garnishing
-Olive oil spray
-Salt and pepper

Glaze Ingredients
-1/3 cup balsamic vinegar
-1/3 cup brown sugar
-3 tbls honey
-3 tbls soy sauce
-2 garlic cloves, minced
-1/4 cup water

Instructions (1 hour)

1. Place a wire rack on an aluminum lined sheet pan and spray with olive oil. Season the drumsticks with salt and pepper and place on the wire rack. Bake at 400 degrees F for 20 minutes.
2. While the chicken bakes, add the glaze ingredients to a small pot and bring to a boil. Continue reducing for about 6-8 minutes until a thick glaze forms.
3. After the drumsticks bake for 20 minutes, baste the chicken all over with half of the sauce and then bake for another 10 minutes.
4. Then baste the chicken again with the remaining glaze and bake for another 10 minutes. Then increase the temperature to 450 degrees and bake for another 5 minutes to crisp up. Garnish with the sesame seeds and cilantro.
