Edamame “Hummus” Dip

About This Recipe:

I am a huge Trader Joe’s fan, and I love all of their creative concoctions that you can’t find anywhere else. One of my favorite TJ products was the edamame hummus, but I believe it was discontinued a few years ago. Luckily this is the easiest thing to make, and is a delicious dip with vegetables and crackers, or a spread for sandwiches. You could use tahini instead of Greek yogurt to create a more “hummus” like dip, but I find that most people don’t have tahini readily available. All you really need is a food processor, and some cooked edamame!

Ingredients (4 servings)

-2 cups cooked edamame
-1/4 cup plain Greek yogurt
-1/4 cup crumbled feta cheese
-1/2 lemon, juiced
-Olive oil
-Salt & pepper

Instructions (5 minutes)

1. In a food processor, combine all of the ingredients and pulse until a smooth consistency forms.
2. Serve with your favorite crackers and vegetables.
