Korean Cucumber Salad

I am not exaggerating when I say that I almost ate an entire pound of cucumbers in one day because of this recipe. This spicy Korean cucumber salad is highly addicting if you like pickles or a little spicy Asian food. I usually don’t even like cucumbers because they are so bland, but these cucumbers are packed with flavor. If you have never had Korean red pepper flakes, do not be alarmed- it is not that spicy! It is more similar to sweet paprika than anything. I use the Assi brand “Gochugaru red pepper flakes,” but any brand that you can get your hands on will work.

Ingredients (4 servings)

-1 lb mini seedless cucumbers, sliced
-1 tsp salt
-2 tbls Korean red chili pepper flakes
-2 tbls rice wine vinegar
-2 garlic cloves, minced
-2 tsps sesame seeds
-1 tsp sugar
-½ tsp sesame oil

Instructions (30 minutes)

1. In a large bowl, toss the cucumbers and salt, and let it sit for 15 minutes. Drain out any excess liquid that comes out of the cucumbers.
2. Mix in the remaining ingredients- the chili flakes, vinegar, garlic, sesame seeds, sugar, and sesame oil. Chill for 10 minutes in the fridge and enjoy!
