
About This Recipe:
Ramen is such a comforting and slurpy meal, but it can sometimes be a bit heavy and salty at restaurants. This super quick and easy miso recipe is my perfect at home bowl of ramen. It’s still comforting and slurpy, but way healthier and lighter than eating it out. You can add any toppings you want (bamboo shoots, mushrooms, etc.,) but my favorites are always egg, corn, and lots of scallions. I am fortunate enough to find fresh ramen noodles at my local supermarket, but frozen or dried ramen noodles would work too!

Ingredients (4 servings)
-1 lb fresh ramen noodles
-6 cups vegetable stock
-2 tbls white miso paste
-1 cup frozen corn
-4 soft boiled eggs, halved
-2 scallions, finely slicedĀ
-Sesame seeds, for garnishing
Instructions (25 minutes)
1. In a large pot over high heat, bring the vegetable stock to a boil and then mix in the miso paste. Add the ramen noodles, and cook for as long as instructed.
2. Stir in the frozen corn to heat through, and taste to see if any additional salt is needed.
3. Assemble the ramen bowl with the boiled egg, scallions, and sesame seeds on top.
