Mini Shrimp Sliders

About This Recipe:

As a non beef eater, I love any type of alternative burger- turkey, veggie, salmon, and now shrimp burgers! I had some leftover fresh shrimp and was bored of eating plain grilled shrimp, so I decided to make some shrimp sliders instead. These are super fast to make, and only require a few hopefully everyday ingredients. I like my burgers dolled up the classic way- on a sesame bun with lettuce, tomato, pickles, and mayo, but feel free to go wild.

Ingredients (4 servings)

-1 lb peeled shrimp
-1/2 cup parsley
-2/3 cup panko breadcrumbs
-1 egg
-1/2 lemon, juiced
-12 mini sesame buns
Optional toppings: lettuce, tomatoes, pickles, spicy mayo
-Olive oil
-Salt and pepper

-1/2 tsp garlic powder
-1/2 tsp onion powder
-1/2 tsp dried oregano
-1/2 tsp paprika

Instructions (20 minutes)

1. Place the shrimp and parsley in a food processor, and pulse until everything is finely minced.
2. In a large bowl, mix together the shrimp mixture, breadcrumbs, egg, lemon juice, and all of the seasonings. Season with salt and pepper, and incorporate all of the ingredients thoroughly.
3. Form 12 little even sized patties from the mixture. In a large pan over medium high heat, add in 2 tbls of olive oil and cook each patty for 3 minutes per side.
4. Assemble your sliders with the buns and any other toppings that you want!
