Lemon Dill Foil Salmon

It is pretty rare when I am super impressed by my own cooking, but this lemon dill salmon happens to be one of those times. Not only does this recipe require almost no prep work and only 5 ingredients (excluding salt and pepper,) but it is so flavorful and dinner party appropriate. I like to serve this salmon with roasted baby potatoes and carrots. I just cut the potatoes and carrots, toss with olive oil, salt, and pepper, and roast at 450 degrees F for about 45 minutes.

Ingredients (4 servings)
-1.25 lbs salmon
-2 tbls olive oil
-1/2 lemon, juiced
-4 garlic cloves, minced
-2 tbls fresh dill, chopped
-Salt and pepper
Optional sides: 1 lb baby potatoes and 1 bunch of carrots

Instructions (30 minutes) 
1. In a small bowl, mix together the olive oil, lemon juice, minced garlic, and dill. Season with salt and pepper.
2. Line a baking dish with aluminum foil, and place the salmon on top. Spoon the sauce over the salmon, and then cover with the foil.
3. Bake at 375 degrees F for 18-20 minutes until the salmon is fully cooked.
