
About This Recipe:
Even though I don’t eat beef, I still enjoy a good meatball made from ground turkey, chicken, or pork. These turkey spinach meatballs are super healthy, quick to make, and can be made with any protein. If you have a food processor, I highly recommend using it to finely chop the spinach so that it incorporates into the meatball better. If not, a knife (and some time and patience,) will work just as well. I like to serve these meatballs with marinara sauce, and a side of spaghetti or bread.

Ingredients (4 servings)
-1 lb ground turkey
-3 oz fresh spinach, very finely chopped
-1/2 cup breadcrumbs
-2 tbls tomato paste
-1 egg
-Olive oil
Seasonings
-1 tsp garlic powder
-1 tsp onion powder
-1/2 tsp dried oregano
-1/2 tsp crushed red pepper flakes
-Salt and pepper
Instructions (40 minutes)
1. In a large bowl, add in the turkey, spinach, breadcrumbs, tomato paste, egg, and seasonings. Mix until all of the ingredients are well combined.
2. Form the mixture into 12- 14 meatballs, and place them onto an oiled baking dish.
3. Bake at 400 degrees F for 20 minutes until fully cooked and golden brown on top.
