Peach, Prosciutto & Burrata Salad

Fruit in savory salads has been a favorite of mine ever since discovering the Strawberry Fields chicken salad. So it’s no surprise that I also love a good peach, prosciutto, & burrata salad. I always get excited when I see this on a restaurant menu, and it’s also incredibly easy to make at home. Sometimes the peaches are grilled, but peaches in the summer are so delicious that I leave them as is. This is a summertime classic for me!

Ingredients (4 servings)
-2 yellow peaches, sliced
-8 oz burrata
-4 oz prosciutto
-4 oz baby arugula
-1/4 cup balsamic glaze
-Salt & pepper

Instructions (15 minutes) 
1. Layer the salad on a platter with the arugula, peaches, burrata, and prosciutto, and drizzle with the balsamic glaze. Season with salt and pepper and serve!
