Poaching anything always sounds so fancy and complicated, but poached salmon is probably the easiest way to cook salmon! Not only is it super fast and healthy, but if you live in an apartment, you can avoid having your entire place smell like salmon for days. My favorite way to eat poached salmon is at room temperature with a salad and lots of dill yogurt sauce on the side. This is a great recipe for an easy weekday lunch.

Ingredients (4 Servings)
-1.5 lb salmon filet, sliced into 4 pieces
-1 lemon, halved
-Salt and pepper
Instructions (15 minutes)
1. In a deep skillet, bring water to a boil and add in the lemon and salt. Reduce the heat to a simmer and carefully place in the salmon filets.
2. Continue simmering for 6-8 minutes (depending on the thickness of your filet) until the salmon is fully cooked.
3. Remove the salmon, season with salt and pepper, and serve with your favorite sides.
