
About This Recipe:
August is the peak of heirloom tomato season, and what better way to celebrate than with a beautiful tomato tart. This tart only has 5 ingredients, so it will only be as good as your tomatoes are. I had to hunt through a few supermarkets to find these, but it was worth it. You can use any soft cheese or spread as the base, but I chose to use goat cheese. Whipped feta, ricotta, or burrata would also be amazing. This recipe is definitely a show stopping summer treat!

Ingredients (4 Servings)
-1 sheet of puff pastry
-3-4 heirloom tomatoes, sliced
-4 oz goat cheese
-2 tbls basil, chiffonade
-Red wine vinegar
-Salt and pepper
Instructions (30 mins)
1. Bake your puff pastry according to the directions. I baked mine at 400 degrees F for 15 minutes. Make sure to prick the pastry with a fork so that it doesn’t over puff, and score a rectangle leaving a 1 inch border to create a recessed inner area.
2. In a small bowl, combine the goat cheese and basil.
3. Once the puff pastry is done, let it cool (I put mine in the freezer for 5 minutes,) and then spread the goat cheese mixture evenly on top. Then arrange the tomato slices and drizzle with red wine vinegar, season with salt and pepper, and garnish with more basil.
