Sticky Glazed Meatballs

I love how versatile meatballs are, and the endless ways that you can spice them up. These meatballs are super juicy, flavorful, and easy to make for a weeknight dinner. This sauce is sticky, sweet, and salty, and goes really well with a big bowl of jasmine rice. This recipe would also freeze very well if you want to make extra for a handy frozen meal.

Ingredients (4 servings)
Chicken Meatballs
-1 lb ground chicken
-3/4 cup panko breadcrumbs
-1 egg
-1 tbl soy sauce

Sauce
-2 tbls honey
-2 tbls rice wine vinegar
-1 tbl hoisin sauce
-1 tbl soy sauce
-2 tsps sesame oil
-2 tsps cornstarch
-1/2 cup water

Other
-2 tsps sesame seeds
-2 scallions, sliced
-Vegetable oil

Instructions (30 minutes) 

1. In a large bowl, mix together all of the meatball ingredients (the ground chicken, panko, egg, and soy sauce.) Form into 12-14 evenly sized meatballs.
2. In a skillet over medium high heat, add in vegetable oil and brown the meatballs until almost fully cooked (about 8-10 minutes,) rotating sides throughout to cook evenly.
3. Whisk together all of the sauce ingredients in a small bowl and add to the skillet. Cover the pan to reduce the sauce for 5 minutes and finish cooking the meatballs.
4. Garnish with the sesame seeds and scallions.
