Dill Cucumber Salad

If you are a fan of pickles, you will love this “quick pickle” dill cucumber salad recipe. This is a super light, fresh, and healthy side dish that is perfect for a summertime BBQ or picnic. Definitely try to slice the cucumbers as thinly as possible so that the vinegar dressing can really be absorbed. It’s amazing how a few ingredients can quickly transform a bland cucumber into such a flavorful dish!

Ingredients (4 servings)
-1 large greenhouse cucumber, thinly sliced
-1/2 small red onion, thinly sliced
-2 tbls dill, finely chopped
-2 tbls apple cider vinegar
-1 tbl sugar
-1 tbl olive oil
-Salt and pepper

Instructions (30 minutes) 

1. In a large bowl, whisk together the dill, vinegar, sugar, and olive oil until the sugar dissolves.
2. Toss in the sliced cucumber and red onion, and season with salt and pepper.
3. Cover and refrigerate for at least 15 minutes to marinate.
