Spicy Asian Peanut Noodles

Sometimes you just want a simple and easy meal of carbs and sauce in a bowl, and this spicy peanut noodle dish fits that description. If you have never tried peanut butter in an Asian sauce, trust me it’s super delicious! The peanut sauce is quite savory even though it is made with peanut butter, and the fresh cilantro and scallions bring the dish to life. I recommend using the Twin Marquis wheat noodles, which is fortunately available on Freshdirect, but you could also use udon noodles, lo mein noodles, etc. I prefer eating these noodles at room temperature, but you could also serve it slightly chilled for a quick lunch on a hot day.

Ingredients (4 servings)

-1 lb Asian wheat noodles
-1/4 cup cilantro, chopped
-4 scallions, thinly sliced
-1/3 cup peanuts, crushed

Peanut Sauce
-1/2 cup peanut butter
-2 tbls soy sauce
-1 tbl chili garlic sauce
-1 tbl sugar
-1 lime, juiced

Instructions (20 minutes) 

1. In a large pot, bring water to a boil and cook the noodles as instructed. Reserve 1 cup of the starchy water, and then drain the noodles.
2. In a large bowl, mix together the peanut sauce ingredients. Whisk in the starchy water to create a thick sauce (about 1/2 cup total,) and then toss in the noodles.
3. Top with the cilantro, scallions, and chopped peanuts, and serve at room temperature.
