About This Recipe:
I first came across cowboy caviar when I traveled to Savannah a few years ago, and I could not get enough of it! And recently, cowboy caviar has become the trendiest recipe on Tik Tok, so I had to jump on the bandwagon. This is a super fast and easy recipe that requires a decent amount of chopping, but very little actual cooking, which is ideal for the summer. I highly recommend using fresh corn on the cob for the best cowboy caviar, because the texture and sweetness is just so much better than canned or frozen. I believe that Southern cowboy caviar also includes black eyed peas, but I could not find any at my local supermarket, so I omitted it. Just a note that if are making this in advance, wait to add in the avocado until serving so that it does not turn brown. And of course, this caviar is best accompanied by tortilla chips!
Ingredients (4 servings)
-2 cups fresh corn kernels
-15 oz black beans, rinsed & drained
-1 red bell pepper, finely diced
-2 tomatoes, deseeded & finely diced
-1 avocado, diced
-1/2 small red onion, finely diced
-2 jalapeños, finely diced
-1/4 cup cilantro, finely chopped
-Salt and pepper
-1 lime, juiced
-2 tbls red wine vinegar
-2 tbls olive oil
-1 tsp sugar
Instructions (30 minutes)
1. In a pan over medium high heat, add in a tbl of olive oil and cook the corn for 5 minutes. Let slightly cool.
2. In a small bowl, whisk together the dressing ingredients until the sugar dissolves.
3. In a large bowl, combine the cooked corn, black beans, bell pepper, tomatoes, avocado, onion, jalapeños, and cilantro. Stir in the dressing, and season with salt and pepper.
4. Let refrigerate for 15 minutes and then serve with tortilla chips.
