Tahini Dressing

If you’re looking for a new, fun salad dressing, this tahini dressing is the answer to your prayers. It’s super creamy from the tahini paste, and little tangy from the apple cider and red wine vinegars. It is the perfect pairing for roasted vegetables on top of a salad. In the fall and winter, I love eating this tahini dressing with roasted delicata squash and cauliflower, but I have also used roasted carrots, brussel sprouts, and beets. If you want to make this a lighter dressing, you can substitute 2 tbls of the olive oil for water.

Ingredients (4 Servings)
-1/4 cup tahini paste
-2 tbls apple cider vinegar
-2 tbls red wine vinegar
-1/4 cup olive oil
-1 tbl dijon mustard
-Salt and pepper

Instructions (5 minutes) 
1. In a small bowl, combine all of the ingredients and season with salt and pepper.
